My DH would like to know how to make omlettes with the egg part being skinny. Do people add milk? Oil?

I'm not sure what you mean. Could you maybe clarify?

Sure- you know how sometimes people make omlettes in a round pan, and then flip half so that the omlette is a half-circle? Some restaurants put the filling in the middle (which I hate! I like my filling throughout the egg part.)
Sometimes the egg part is thick and fluffy, other times it is very thin- almost crepe like. DH wants to learn to make the crepe-like type. Does that make sense?
He was so excited with the responses to the flat cookie question, and now he has a million more. Since he is "breakfast-making man", he wants to perfect his style.

LOL on that last one.
Couple thoughts, which are more or less reversing things you'd do to fluff them: Don't overbeat the eggs which aerates them and makes them fluffier. Just mix them until combined. Don't add any liquid at all. Most people think milk or cream have a big impact; they don't, water does. Skip the liquid altogether.

Here's how I make mine...use a slightly larger than normal pan (I use a 10" skillet for a 3 egg omlette), beat the eggs (though I don't pay much attention to how much I beat them), sauté whatever bits you are having in your omlette, making sure to spread evenly around the pan before adding the eggs, add the eggs tilting the pan so that they cover all the bits, let stand 30 seconds then either flip or place under preheated boiler for about 10 seconds...roll or fold in half and plate!
Bob- I know it is funny (I totally agree!), but he does take it so seriously. BBQ too. But, for a couple of compliments, I get a beautiful breakfast on weekends. Like, "Wow! This might be the greatest pancake I have EVER had!" He also impressed our nephews by putting chocolate chips in the pancakes, so he got great feedback from them too!
Both answers totally make sense. Less beating of the eggs and bigger pan. That second one is so obvious. It's funny how we never thought of that. Probably because we just bought him an omlette pan, and never thought of changing that out. The man needs tools, you know!
