View Full Version : Substitutions for Veggies in Grilled Italian Vegetables with Pasta

I did a quick search and couldn't fiind anything... so, here's my question. I pulled out my June 2000 CL and found a recipe that I thought sounded yummmy... Grilled Italian Vegetables with Pasta... however, me and dh don't really care for eggplant, and I was hoping to get some suggestions on other veggies I could use instead. It already has zucchini and red bell pepper, plum tomatoes, scallions that are to be grilled... any ideas? http://www.cookinglight.com/bbs/confused.gif TIA! http://www.cookinglight.com/bbs/biggrin.gif

patsyk - I would just leave the eggplant out and add more of the other vegetables. I can't think of another that would grill as well as the zukes, tomatoes, peppers and onions.

How 'bout portobello mushrooms (sorry for mispelling the 'shrooms, Em, but I am NOT a speller by nature!)

kwormann - oooh! What a good idea! I have been wanting an excuse to grill up some portobellos and this will definately do it!

I think portobellos (no fear, Kim, you spelled it right http://www.cookinglight.com/bbs/biggrin.gif ) are a great idea. I know it's kind of the same thing, but yellow squash would be good, and colorful, too.

Most veggies are great grilled, even asparagus, sweet potatoes (sliced somewhat thinly), corn, etc...obviously these might not all work in your recipe, but I say use whatever veggies you like!

I do love me a grilled portobello!!
