I need to make a birthday cake for a friend and would like a recommendation - I'm looking for a cake that is not all chocolate, no walnuts, with a little lemon or strawberry in it (the fruit part isn't a requirement), and the most important requirement of all - not too hard to make!!

There are so many possibilites. You may want to do a search of the BB and get some cake ideas. Depending on what type of cake you want exactly, especially if not a traditional birthday cake, you will find many recipes and reviews.

This one may not work for you, because it needs to be frozen. But it's good and light and easy!
Neapolitan Angel Cake
1 angel food cake (loaf form)
1 pt chocolate frozen yogurt, slightly softened
1 pt strawberry frozen yogurt, slightly softened
8 oz light Cool Whip
8 oz lowfat lemon yogurt
Cut cake horizontally into 3 slices. Place the bottom slice on a large plate. Spoon chocolate frozen yogurt over the cake; smooth with a spoon. Top with the 2nd cake slice and strawberry frozen yogurt. Top with the 3rd cake slice. Cover tightly with plastic wrap and freeze for 3-4 hrs or until firm.
Fold the lemon yogurt into the Cool Whip; refrigerate at least 10 minutes. Spread over the tops and sides of the cake. Slice and serve immediately. Freeze any remaining cake.
This is good and looks pretty too! You could garnish it with strawberries, lemon zest, etc.

This cake is alot of chocolate but it is the best cake! My mother used to make it for our birthdays since I can remember! I don't know where it comes from but here it goes:
Lazy Wife Cake
3 cups flour
5 tbsp cocoa
2 cups sugar
2 tsp baking soda
1 tsp salt
3/4 cup plus 3 tbsp veg oil
2 tbsp vinegar
1 tbsp vanilla
2 cups cold water
mix your dry ingredients together
make 3 holes in your dry ingredients
1st hole veg oil
2nd hole vinegar
3rd hole vanilla
pour cold water over the entire mixture and beat with mixer on med speed until smooth consistency. butter and flour a 9x13 cake pan. Bake at 350 degrees for 35 to 40 min
We always put peanut butter iciing on top.
Follow the directions for buttercream icing on the back of the confectioner sugar box and add peanut butter and milk until desired consistency. When the cake is cool than put your icing on.
This cake is always moist and delicious!
