I am sorry to hijack your thread here, but I was wondering what filling you used? If you used the black bean one Bob mentioned, do you have the recipe for that? Thanks. I have been eyeballing this recipe for a while and I might just have to make it this week.

I used :
12 oz (? regular size, not tiny, not large) can of black beans, and I mashed 1/2 cup of them.
About 6 oz (before cooking) chicken, which I dry pan fried
1/2 cup sour cream
a generous 1/4 cup of sliced green onions
a double-handful of diced yellow and red peppers
