Hi Everyone,

I am looking for an easy dessert to make for tonite. It will be just my DH and I so something that can be individual servings so I do not have leftovers.

Well, to live up to my rep, I suggest the grill. Grilled peaches or bananas are incredible over ice cream...let me know if you want more info on how to make either http://www.cookinglight.com/bbs/smile.gif

I guess it depends on what ingredients you have on hand. The grilled fruit with ice cream sounds great.

Other options, sorbet with madelines and drizzled with a ginger syrup with berries.

If you have strawberries, how about a strawberry shortcake?

I try to avoid the market on weekends, thus my constant reference to ingredients at your fingertips. http://www.cookinglight.com/bbs/smile.gif

I'm not sure what we are thinking for dessert. Dinner will be the Pesto with Chunky tomato viniagrette and the pepper, coriander salmon. I actually need to run to the grocery store real quick so ingredients should not be a problem. The grilled bananas sound awesome, BUT we do not have a grill yet. We are getting one next week so the recipe would be great, Kim. Any other recipes with bananas?

Hi. There have been a couple of banana dessert recipes lately. One was called Spiced Bananas and you put it over vanilla yogurt - it might even be from the May issue. The other used rum...I will go through the old posts and see if I can find them if you are interested.

This got good reviews recently:

Roasted Bananas With Brown Sugar-Walnut Glaze

SOURCE: Cooking Light YEAR: September 1997 PAGE: 138

INGREDIENTS FOR 6 SERVINGS:
1/3 cup packed brown sugar
1/4 cup fresh lemon juice
2 tablespoons reduced-calorie margarine, melted
1/4 teaspoon ground cinnamon
4 large firm ripe bananas (about 1-1/2 pounds)
Cooking spray
1/4 cup chopped walnuts, toasted
1-1/2 cups vanilla low-fat frozen yogurt

INSTRUCTIONS:
1. Preheat oven to 450 degrees.

2. Combine first 4 ingredients in a bowl, and set aside.

3. Cut bananas in half lengthwise. Place banana halves, cut sides up, on a
jelly-roll pan coated with cooking spray. Bake at 450 degrees for 4 minutes.
Drizzle sugar mixture evenly over banana halves, and sprinkle with toasted
walnuts. Bake an additional 3 minutes. Cut each banana piece into thirds
crosswise. Serve bananas with frozen yogurt; drizzle with any remaining sugar
mixture. Yield: 6 servings (serving size: 4 banana pieces and 1/4 cup frozen
yogurt).

CALORIES 237 (27% from fat); FAT 7g (sat 1.5g, mono 1.7g, poly 3.1g); PROTEIN

I haven't tried these yet, so I can't vouch for them, but for Mother's Day, my mom made the strawberry parfaits from the May issue. She and my grandmother both raved about them.

Here's one we tried a few months ago, and we loved it ....I especially liked that it only made 2 servings - no leftovers sitting around tempting me!

Lemon Pudding with Blueberry Sauce

INGREDIENTS FOR 2 SERVINGS:
1/4 cup thawed frozen egg substitute
1/4 cup sugar
1/3 cup 2% low-fat milk
1/2 tsp. grated lemon rind
2 tblsp. fresh lemon juice
1 tsp. reduced-calorie margarine, melted
2 tblsp all-purpose flour
Vegetable Cooking Spray
1 tblsp. sugar
1 tblsp. water
1 tsp. cornstarch
1/2 tsp. grated lemon rind
1 tsp. fresh lemon juice
1 cup fresh blueberries

INSTRUCTIONS:
Beat egg substitute at high speed of an electric mixer for 1 minute. Add 1/4
cup sugar; beat 1 minute. Add milk and next 3 ingredients; beat well. Add
flour; beat until well blended. Pour half the mixture into each of 2
(6-ounce) custard cups or ramekins coated with cooking spray. Place custard
cups in a 9-inch square baking pan. Add water to a depth of 1 inch. Bake at
325º for 30 minutes or until set. Remove cups from water; set aside.

Combine 1 tablespoon sugar and next 4 ingredients in a microwave-safe bowl;
stir well. Add blueberries; stir well. Microwave at HIGH 3 minutes or unitl
thickened and bubbly, stirring after 1-1/2 minutes. Spoon half of the mixture
over each pudding. Yield: 2 servings

Well, peel the bnanas almost to the end, spread butter and brown sugar (I use butter spray), pull the peel back up and put on a heated grill rack for 6-8 minutes,turning once or twice, until soft. You can also slice them and put in alumium foil with the same results. You can also drizzle kahula or tequila over them. Thanks everyone!

Did I say I needed a light dessert? We ended up being real bad and having banana splits with everything on top...and I mean everything, nutella, peanut butter, chocolate syrup!

But I have copied these recipes and will be using them soon.
