He uses (sometimes) a white knife, has anyone seen it and what is it made from? I caught it when channel surfing and there were no credits at the end of the show. TIA

I've wondered the same thing. I have never seen them in any magazine, catalog or store. I can't imagine what they are made out of. Would be intereseted in knowing.

Ming Tsai uses a ceramic knife, they are sharp, but brittle. If you use them wrong you risk breaking the blade.

There used to be a link at Food Network, at the recipe page for East Meets West, but it's not there.

If you go to the foodtv.com and then to the "Marketplace" they have a link to buy his signature knifes. Be prepared, they are some of the most expensive knives I have ever seen, yes, more than Henkels.

They're made by a company called Kyocera which also makes cell phones - you can find them on their web page http://www.kyocera.com./kai/consumer/index.htm I've heard that Williams and Sonoma will be carrying them soon.
