Recipe for goat cheese stuffed veg??

Does anybody have a recipe for bell peppers (red, yellow or orange) stuffed with an herbed goat cheese or chevre stuffing that isn't too sinful? This would be served hot as a main course. Thanks!

Just bumping up this thread...what an awesome sounding recipe. I would also love to hear some suggestions.
