View Full Version : Help -- Can't Find Mexican Appetizer Recipe !

I was looking for Mexican dessert recipes on this board the other day, and while reading through different postings, I came across an appetizer recipe someone had posted where you cut smaller circles out of tortillas, put them in muffin cups, fill them with some sort of Mexican filling, and bake them. I didn't pay much attention to it at the time, because I was looking for a dessert.
But now I need a Mexican appetizer, and I was thinking those would be perfect, so of course I can't find the recipe again. I searched under all the topics I could think of, and I just can't find it! Can anyone help? I'm sure it's here somewhere!
And if you don't know of the particular recipe but have other ideas for a hot (as in temperature, not necessarily spiciness) Mexican appetizer that is not a dip, those would be appreciated too.

Sorry, Becky M, I'm not the girl with the recipe you need.
However, you might try won ton wrappers, mist with olive oil, bake until golden at about 350 and put either guacamole or your own miniature Mexican layered dip in each won ton wrapper.
The trick is to trim a little off the won ton edges and they fit nicely in the small
muffin tins. You can prepare them about 45 minutes prior to the time you want to serve them, without them becoming soggy.

Here it is, I think this is what you are looking for. It was on a the "cinco de mayo, anyone?" thread. I was not the poster of the recipe, I just copied it here for you.
The original recipe was found on "allrecipes.com" and it is called "Antojitos Minis". I have modified it, so here is what I do:
Cut flour torillas with a biscuit cutter so you get 24 circles. I usually get 4 circles out of each tortilla. Place the circles into muffin tin cups and fill with the following mixture:
1 large tomato, seeded and chopped finely
1 can of black beans, drained
1 red pepper, chopped finely
2-3 scallions, chopped
few tablespoons of salsa
1 jalapeano, chopped finely
several shakes of chili powder
Spoon about 1T of the mixture into each cup so that it is distributed evenly. Top with shedded cheese. Bake @425F for about 10min until the cheese is bubbly. I top with low fat sour cream. I use a butter knife to pop the cups out of the muffin tin. As I am re-reading the orginal recipe, it says to grease the muffin tins first. That would probably help. These are really fantastic.

Yes, that is the recipe I was looking for. I don't know why I couldn't find it on those threads -- I think I read through each one of them three or four times! I guess I was just suffering from a long week! Thanks again!

I have a question regarding this recipe- are we talking regular size muffin cups here? Could you do them in mini-muffin cups? If so, what do you use to cut the circles of tortillas small enough? This sounds really really good!

I made something similar to what browneye and s made for Mother's Day. It can be served cold or at room temp. I made everything the day before and assembled them just before serving. I got the idea from a recipe that called for shrimp. I wanted a vegetarian version. I don't have the exact quanities for this recipe I just did everything to taste.
2 cans of black beans drained
Cumin
Chili Powder
1 onion (med.dice)
3 cloves of garlic (minced)
Fresh or frozen corn
Chunky Salsa
Flour tortillas
Saute' onion, garlic, cumin, and chili powder in a little olive oil until onion is starting to brown. Add the beans, corn, and salsa. Cool.
Preheat oven to 350*
Place tortillas in a stack & trim edges to form a large square. Brush both sides with oil. Restack tortillas & with a pizza cutter or large knife cut into 2" squares.
Press each square firmly into the bottom of miniature muffin tins. Bake until golden, about 10 minutes. Let cool.
To assemble: Fill each tortilla cup with black bean mixture. Pipe or spoon lowfat or nonfat sour cream garnish as desired.
