HELP! I'm looking for recipes for a luau buffet which don't require days of slicing & dicing but can be dressed elegantly for a church FUNdraiser. Mashed sweet potatoes w/coconut milk & creole spices, black beans & rice, and roasted pig have been suggested with pineapple salsa & cubed cheese appetizer. What else? Need a choco + non-choco dessert. Many Thanks!

My mom had a luau for my DH and I after our wedding. We got married in Maui so only had close family with us at the wedding. My mom decided that we needed a reception in Kansas City where she lives.

We had about 75 people that attended. My mom contracted with someone to roast a pig. It was excellent. I don't think that the roasted pig was all that expensive either.

Gee Pat, wish I could look through my stuff and see if I've got anything, but I'm just here for a minute or two. By all means run a search in the archives (I don't remember if it's the general archives or popular threads) but last summer I seem to recall posting some things, and very possibly there were other threads then, too.

In case you haven't tried the search mechanism, it's in the upper right hand corner next to FAQ. You will need to adjust the drop-down box changing the search request from Great Foods to one of the archives. Good luck!

PatM,
You can search through the online version of the Honolulu Star-Bulletin. On Wednesdays, they have some features such as Hawaii's Kitchen and the Electric Kitchen with Hawaiian or Pacific recipes. You can start here http://starbulletin.com/2001/05/16/features/index.html

At the bottom of the framset, there's a link for Back Issues, and you can search through all the Wednesday articles through the year. Unfortunately, they dont have a recipe search engine.
Hope this helps!
