I baked the Buttermilk-Apple Coffee Cake today. I would give it an 8 or 8.5. The cake is very tender and you can really taste the almond flavor from the extract, if you are not a big almond fan you might want to trim the amount to 1/8 tsp. I think I maybe baked it a tad too long because some of the apple-sugar mixture burned on the bottom.
My DH already helped himself to two slices.
Last night, we had the Monterey Jack, Corn and Roasted Red Pepper Risotto. This was at least a 9--flavorful and colorful and not too heavy. I used only about half the corn, per someone's suggestion, and that was about right for us. I definitely want to make this again.
