View Full Version : The first May review? Asparagus/ham casserole

I made the asparagus & ham casserole tonight. My husband and I gave it a 4. My 6-year-old son pronounced it "not so good." I thought the thyme and onion overpowered the ham and asparagus and would reduce those quantities next time.
(I edited this post to downgrade my original review from a 6 to a 4. I realized that when I'd rather dump the leftovers than reheat them that it was less than a 5. It had potential, though.)

http://www.cookinglight.com/bbs/frown.gif I told myself I would NOT look at any May reviews until I received my magazine...as you can tell I blew it. http://www.cookinglight.com/bbs/mad.gif
From this point on I will be strong.

We made this for dinner tonight and loved it! A good comfort food. We rated it an 8. I substituted soy milk for the regular, and omitted the breadcrumb/parmesan topping. Sorry you didn't enjoy it, schuh. Guess we all have different tastes.

Hmm, should I try this or not? I wanted to make this for dinner soon since I have all the ingredients on hand. Maybe I should spice it up some?

Mrs. Reber, do try it. It had potential -- a good consistency, not difficult to make, etc. I just found the thyme & onions overwhelming. If you do try different spices and are happy with the combination, please let us know!

I think maybe I'll cut back on the thyme and try to find another herb to substitute. This recipe caught my eye because it looked like it was easy to prepare on a weeknight. I have to use my asparagus soon, too! I'll let you know how it turns out!

In retrospect, I realize that I sauteed the onion a couple of minutes longer than called for, which would make it taste milder and sweeter. But I wouldn't reduce the thyme by much if you like the flavor of thyme. We thought the seasoning was perfect. If you have the ingredients on hand, MrsReber, go for it!

I made this for dinner last night. It wasn't bad, as far as casseroles go, but I thought it could've used a bit more flavor. I did add some locatelli cheese to the milk mixture, thinking that might help a bit. I found the milk mixture to be a bit thick. I'm thinking I'd use lowfat milk or less flour next time. Overall, it was extremely filling. I could barely finish my dinner, but hubby ate a ton of it! He likes a hearty meal. I might add more pepper to it to give it a little kick. And I think it needs a bit more ham, too. There's hardly any left, though! I wouldn't rave about the recipe, but it made a nice, quick, easy dinner for a weeknight.

Hmmm....Well, I tried this recipe on my husband and two stepsons last night and it was a winner. They were licking the pan and begging for more.
I made a few changes---some based on the notes posted here---so maybe these will help:
- I used Alpine Lace honey ham
- I substituted 1/2 c. skim milk for 1/2 c. of whole milk (i.e. I used a 1/2 c. of each)
- I tamed down the thyme
- I substituted Romano cheese for parmesan, and upped it to almost 1/4 c. Yikes! I think I made up for some of the fat, though, with my milk and ham substitutions.
It was great!

I made this for dinner earlier tonight. I won't make it again though http://www.cookinglight.com/bbs/frown.gif
It tasted bland to me and needs some additional spice. I followed recipe with the exception of sherry in lieu of lemon juice.
Very easy to fix. My DH the guinea pig which eats almost anything, didn't care for this at all.

Made this for lunch today. I really liked it. I was craving a creamy type of pasta dish this past week and this fit the bill. I know that there are some negative reviews about this casserole. I did not make any changes i used meat dept ham not deli ham for big chunks. I think maybe i liked it so much is that it was comfort food & i had a special craving for a creamy pasta. And perhaps i havnt had any sort of ham for 4 or 5 months.
