Smoked Pork Chops Recipes?

DH and I bought smoked pork chops and grilled them with barbecue sauce last night. I still have 3 left to cook/grill/whatever. Do you have a great recipe to share? Thanks!!

Put some crushed pineapple and a little brown sugar on top and bake in the oven. Don't really have a recipe, just until they look right, a little carmalized on top. Maybe 350º

Susan, we smoke a lot of pork with our stovetop smoker, and when we have leftovers we use them for wraps! I've cubed or shredded the pork and sprinkled a bit of Penzey's Southwest Seasoning, then added black beans, red onion, cheese and some sliced red bell pepper! Or we shred the smoked pork for any bean soup in place of ham! We love Navy Bean and Smoked Pork (or ham) Soup. I've also used smoked pork in homemade scalloped potatoes for a WONDERFUL main dish! In fact, I think that sounds good enough to make around my house tomorrow night!

Thank you both!! The scalloped potatoes sounds wonderful- our weather has gotten cooler and I have all the ingredients for it! I don't have any crushed pineapple but will get some the next time I am out!!
