I received three oils as a birthday gift. Two are olive oils: one with Mediterranean herbs and one with French herbs. The third is grapeseed oil.
So... what do I do with them? Any ideas or recipes? Also, do I need to refrigerate them once they are opened?

You can use them to make salad dressings. If you have fresh herbs, and some vinegar, that's about all you need!

I heard this over the radio yesterday on a cooking show. It might be better to put the oils into containers that you can scoop out what you need (of course using a clean spoon, not one that has stuff of what you're making on it), and put it in the fridge. It will congeal, but thats ok. They actually keep much longer than going rancid on a shelf. Im going to try this myself.

Jessica, hang onto that Grapeseed Oil! I love that stuff, and actually cook with it more than Olive Oil! (May get booted off the BB for saying that!) Grapeseed has a higher smoke point than Olive Oil, so it's better for cast iron skillets and searing, in my opinion. Also has a unique flavor! I cook with it more than season with it, and I've always had good luck! http://www.cookinglight.com/bbs/biggrin.gif

cdm...eewww! Buy smaller containers of oil rather than putting it in the fridge!

Jewel, I was going to post the same comment about grapeseed oil but my computer froze during that post! And I do remember reading that grapeseed oil is as good for you as olive oil if not better in some regards (but I have CRS so can be sure!)
