View Full Version : Review: Salmon Salad from May 2001 - yum!

My DH and I just finished the Sizzling Salmon and Spinach Salad with Soy Vinaigrette on page 164 of the May 2001 issue. It was delish! Great textures, and I loved the contrst of the warm mushrooms, corn & onions over the crispy spinach and red peppers. I used cajun salmon fillets from the grocery store and sliced button mushrooms, and it was excellent.

Can't wait to try some of the other salmon recipes!

Definitely a make-again. Warning, though -- the "soy" in the title has nothing to do with soybeans -- it's soy sauce. I was afraid it was going to be really salty with 3T of soy sauce, but it was fine.

This is on my list to try -- it looks great. Did you use low-sodium soy sauce? I use regular, and was wondering if I should cut it back a bit.

Yes, I used low-sodium, but only because I don't like salty food. I'm sure regular would be OK if you like food that is a bit saltier!

Thanks CheerLiz. I don't mind my food a little salty, so I'll try it with the regular soy sauce.

I just had this for dinner and it was great! I followed the recipe except I forgot to buy more scallions,so I had wnough for the dressing but not enough to cook with the shiitake mushrooms. I can't wait for dinner tomorrow!

I must agree with all of the other positive comments about this recipe. We had this for dinner tonight and it was outstanding! I used the low-salt soy sauce and the dressing was a bit on the salty side but still very good. The shiitake mushrooms really make the salad IMHO. I used part of the dressing to toss with the spinach/mushroom salad mixture and then placed the salmon on top and drizzled alittle more dressing on top of the fish. We also BBQ'ed the salmon instead of broiling it. An outstanding summer salad, perfect for those hot evenings!

We have made this one a couple of times already! Very pretty presentation - would be nice to serve to guests. Also, I did use the low-sodium soy sauce, and the taste was perfect for us.

My dh doesn't request repeats very often, and this one is on his list of things he wants to have again! YUMMY! http://www.cookinglight.com/bbs/biggrin.gif
