I made this salad yesterday...Nice, versatile dish. Good crunch from the veggies (although next time, I will increase the veggies by about 50%). This is the kind of dish that allows you to play around a bit (i.e., use daikon or jicama instead of cucumber, add zucchini, etc.) I'll definitely make it again.

One practical note: while the actual prep time is pretty brief, the overall prep time is longish because of the wild rice (about 1 hour) and the quinoa (about 30 minutes). Plus, the recipe indicates 2 hour refrigeration before serving.

I made the rice earlier in the day when I knew I would be puttering about in the kitchen for an hour. Then I made the quinoa as I was prepping the veggies and making the dressing. I also refrigerated for only 1 hour 45 minutes and suffered no ill effects! <grin>

I made this on Sunday to have for my lunches this week. I used a brown rice/wild rice combo since that is what I had on hand. I also did not have any cucumbers so I used some mushrooms and a few diced tomatoes. I second the suggestion to increase the amount of veggies in this. Overall I thought it was a very good dish and seems to hold up well.

This was a good salad with good flavor, but i should of read the reviews first. I always equate a cold summer salad with tons of veggies, this salad was weak in the veggy dept. next time i will chop up the whole cucumber,add cherry tomatoes and instead of green onions add purple onions.
