Has anyone made these yet? The recipe doesn't
call for it but don't you think some baking
of the peppers would improve the appearance
and taste?

Hi, I do believe that a little brushing with
olive oil and baking would improve upon this.
I'm going to try these soon.

Hmm....this must be a June 2001 recipe because I haven't seen it or else I would have already made it. I love cajun food.

Elizabeth, the recipe is on page 188 of the May 2001 issue. The official name is Cajun Chicken & Rice Stuffed Peppers

I made them, and really liked them! However, there was a ton of stuffing...
I really don't know what to say about baking them - I didn't, and was suprised at how well they were cooked. The appearance did leave something to be desired. My peppers were't that round, and really weren't attractive.
