View Full Version : Recipe Review: Thai Grilled Chicken (June, 2001)

I know some of you probably are still waiting on the June issue (mine came this month in a plastic bag -- maybe that makes a difference with distribution), but I received mine Saturday, and made this on Sunday. What a great recipe! Spicy, flavorful, yummy. I do think the recipe may have a couple of errors in it though. The first instruction is to "prepare the grill," even though the chicken needs to marinate for 3 - 8 hours! The marinade is more like a rub that you place between the skin and the meat. I did this, and then noticed it didn't say to discard the skin. So, I cooked it with the skin, and then saw the last instrucion was to "discard the skin." After it was cooked, that seemed difficult, plus it would have removed some of the "grilled" flavor. I wonder if the skin is to be discarded before grilling? In any case, this was great -- next time, I'll probably just take the skin off (I used drumsticks and thighs) in the first place. A definite repeater and probably an 8 or 9 rating.

Thanks for the review. I was going to prepare the same dish last night but since I am pretty much a spontaneous cook, I discovered I didn't have any corriander seeds. Will have to drive 30 miles today in hopes of finding them since the chicken is defrosted now. I am using some boneless thighs (bought a bunch based on last month's recipes).

Sneezles -

A little trick on spices:

Go to BBB (bed, Bath and Beyond) and just buy their $20 spice rack with spices already in it.

2 years after buying the rack I needed Thyme (for Gail's Psycho Chicken), and lo and behold it was in the spice rack.

This may not be the cheapest way to buy corriander, but you never know what else you might need http://www.cookinglight.com/bbs/smile.gif

Thanks for the tip but the closest BB&B is over 60 miles and not that I wouldn't love to go shop! I have tons of spices just was out of corriander seeds.
