Each time we tried one of the chicken thigh recipes, were were amazed at how tasty they were.
Oven-Fried Chicken Thighs with Buttermilk Mustard Sauce. I used chicken quarters for this recipe and baked them 37 minutes. This chicken was SOOO good. We loved that mustard sauce.
Stir-Fried Chicken and Broccoli With Black Bean Sauce. This recipe was a winner, too. I love the flavor of sesame oil. I made no changes to it.
Chicken Thighs With Marsala-Mushroom Cream Sauce Over Noodles. Again, another great recipe!! It reminded me of something you'd eat at a nice restaurant. Everyone liked it.
Chicken Thighs With Garlic and Lime. I made some changes to this recipe: I used 1 1/2# boneless thighs, apple cider vinegar (rather than white vinegar), and 1/2 t. dry (rather than 2 t. fresh) cilantro. It was enough food to feed 5, and the sauce was great on rice. YUMMMM.
Cheesy Chicken Chowder. Actually, I had taken this from the bulletin board. This was easy to make and was pretty good, but I am undecided whether I'll make this again.
Barbecue Roasted Salmon. Other than my husband, the rest of my family really liked this. (He doesn't like the flavor of cumin, and this spice seemed to come through too much for his taste.) This was sure a quick and easy recipe.
Grilled Pork Tenderloin With Apple-Ginger Sauce. I did make some changes to this: peach rather than apple jelly and I doubled the garlic. I ended up with way too much sauce, and so next time I will halve the sauce ingredients. This was a very quick recipe to make and was delicious--definitely a repeater.
Spaghetti Pie.. This was on the bulletin board (from CL May, 2000). Despite all the great reviews, our family didn't really care for this. It seemed really bland. It definitely needed some spices to perk it up--probably Italian.
Grilled Flank Steak with Green Onion-Ginger Chimichurri. This was OUTSTANDING! We had company for dinner, and this was a neat main course to serve. When I make it next time, I will halve the sauce ingredients. I didn't buy the mint leaves but used just a dash of peppermint extract.
Strawberry Salad With Feta Cheese. I served this with the Grilled Flank Steak. This is now my favorite salad recipe! It was posted on the CL bulletin board: http://www.cookinglight.com/bbs/Forum1/HTML/006162.html I used the white wine vinegar rather than the sherry vinegar. I can't say enough how much we enjoyed this salad!!
Chocolate Mousse. I served this with the above 2 recipes for our company. This was excellent, so rich tasting--enjoyed by all. I've made it twice now. I can't believe we've eaten tofu and LOVED it!
Meat-and-Potato Stuffed Peppers. This was my least favorite CL recipe I've made yet. Our family is not that fond of a strong green pepper flavor, so I can't really blame that on the recipe. The filling was barely OK to me, but the kids liked it quite a bit.
Strawberry Parfaits. These were to DIE for!! I couldn't find the amaretti cookies, and so I used 3/4 c. of shortbread cookie crumbs. You've GOT to try this recipe if you love strawberries. This made 5 servings rather than 4.
Lemon Sponge Cake With Strawberry Filling. Another great strawberry dessert that we all enjoyed. This was more work than the Strawberry Parfaits, but boy was it good. I had to boil the sauce quite a bit longer than the recipe called for (25 minutes rather than 15), and it still didn't boil down to the 3/4 cup. But it was fine that way. I also had to bake the cake about 3 minutes longer than the recipe had indicated. I'll definitely make this again.
