I enjoyed my lunch today so much I had to share...
I tossed together some Roma tomatoes, cucumber, purple onion, zucchini, and a couple of chopped olives with olive oil, lemon juice, oregano, salt and pepper. Normally I would add some grilled or roasted chicken (as I am a definite carnivore) but didn't have any handy. I topped my veggies with some feta cheese and stuffed them in a whole-wheat pita. YUM! I never would have thought a meatless sandwich could be so satisfying. I will have to pay more attention to the recipes posted by all you vegetarians!
