have had this brocoli salad & would like to see if anyone has a lowfat recipe. it has broc.flowerettes, bacon, red onions, some kind of nut like pecan or walnut, w/ a sweet mayonaisey dressing. has anyone ever had a similar salad? thanks for any input. tammy

Broccoli Salad
Recipe By :
Serving Size : 10 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

3 crowns broccoli
1 small red onion (sliced thin)
1/2 cup golden raisins
8 strips bacon (cooked and cut up in small pieces)
1 cup mayonnaise
1/2 cup sugar
2 tablespoons vinegar
Chop broccoli peeling stem if necessary. Combine with onion, raisens and bacon.
Blend mayo, sugar and vinegar in small bowl. Pour over broccoli mixture. Do not stir. Chill for several hours on overnight. Mix just before serving. You may add 1/4 cup of sunflower seeds before serving

To lighten this up a little you could substitute 1/2 of the mayo with plain yogurt and use only 1/2 the amount of sugar. I don't know if you are interested in this one but my sister gave me this recipe and it's delicious too.

Broccoli Salad with Feta Cheese

3 crowns broccoli -- chopped
1 red onion -- thinly sliced and sauted
8 strips bacon -- cooked
1 cup Craisins
1/2 cup mayonnaise
1/4 cup sugar
1/2 cup yogurt -- plain
2 tablesoons vinegar
1/4 cup sunflower seeds
1/2 cup feta cheese
Mix onion, broccoli, and craisens. Set aside in bowl
In separate bowl, combine mayo yogurt, sugar and vinegar. Pour over broccoli mixture. Chill a few hours
Before serving toss salad and top with pieces of cooked bacon, sun flower seeds and feta cheese.

yep jazzcat, that was it, but i can't believe the nutritional content. this is why i never eat any of the salads in the deli, they always taste so good, but aren't good for you. i'm going to try to lighten it up a bit, maybe w/ turkey bacon?
want to make something different for my daughter's teacher appreciation luncheon on friday.
