View Full Version : Fortune Cookies - from the deceased Eating Well Magazine

Help! For years I have been mourning the loss of Eating Well, but recently our family began to subscribe to cooking light, and in its stead, I am pleased. One problem, though, haunts me. I lost my favorite issue of Eating Well! And in it was a recipie for fortune cookies! Although I have found other recipies, none compare to this, and I am despearte to find it again. I do not know the year or issue of the magazine, but I can tell you that on the penultimate page there is a photo of two brightly colored popsicles, one with kiwi and I'm not sure what fruit the other is made of. I'm near the point of giving up. I was hopeing that I could possibly find some former Eating Well subscribers who could help me in my plight. If you have the recipe, or know where I can find back issues of the magazine I would greatly appreciate it. Thank you

Eleonore - I really miss Eating Well Magazine, too. I have just been going through all my old issues. Thanks for describing which issue it was in with the popsicle reference...that made it easy for me to find the issue in question! (July/August 1996) -Valerie

Fortune Cookies

It's a toss-up as to which is more fun - making the cookies or writing the fortunes to put inside them

1/3 cup sifted cake flour
1/3 cup granulated sugar
2 egg whites
2 Tbsp. confectioners' sugar
2 Tbsp. vegetable oil
1 Tbsp. butter, softened
1 tsp. vanilla
pinch of salt

1. Preheat oven to 300. Very lightly oil 2 nonstick baking sheets or lightly coat them with cooking spray.

2. In a food processor, combine all of the ingredients and process until smooth.

3. Drop 6 scant tablespoonfuls of the batter onto the prepared sheet, placing well apart from each other on the sheet. (Set the remaining batter aside.) With a small spatula or the back of a spoon, spread each spoonful into a 3 1/2 inch circle. Bake until quite golden, 10 to 15 minutes.

4. Have a small bowl and muffin tin ready. Remove the baking sheet from the oven. With a thin spatula, carefull release the cookies, but leave them on the baking sheet. Return the sheet of cookies to the oven to soften for 1 minute. Open the oven door but leave the cookies inside to remain pliable in the warmth of the oven.

5. Remove 1 cookie at a time from the oven. Lay a fortune in the center of the cookie and roll into a tube, overlapping the edges slightly. Holding the ends, fold the cookie in half down over the rim of the bowl to form the traditional fortune cookie shape. Immediately transfer the cookie to the muffin tin to keep it from opening as it cools. Repeat with the remaining cookies.

6. Spread and bake the remaining batter, and form cookies as directed above.

Makes 12 cookies

65 calories per cookie, 1 g protein, 3 g fat, 9 g carbohydrate, 20 mg sodium, 3 mg cholesterol, 0 g fiber

Val- I saw this thread and wondered if you came to the rescue - you are the Eating Well source now, eh? This story sounded so familiar to my search for the chocolate cake! I'm so glad you could help again - these look worth trying too.

I know, Peeps. I thought of you immediately. I don't have all the back issues, but I have a lot of them!! This recipe does look fun. Someday, when I have kids, I will try it.

By the way, I am still planning to try that banana chocolate heath bar dessert you love. waiting for the hot weather to arrive here in CT.

(p.s. eleonore did find the recipe here...she mentioned it in the post about nutritional bars)

Oh Val - you MUST try the banana chocolate heath bar thing, it is just amazing and so easy. I went through a phase where it seemed I was making it once a week but lately I've been trying other things but you just reminded me I need to make it again soon. Probably my all time favorite CL recipe. You won't be disappointed!
