View Full Version : ISO: Fruit Dessert Idea

I'm hosting a small gathering and I need a dessert idea. My diet is very restricted right now, but I can have fruits and vegetables prepared without fats, sugars, etc. So I was thinking about maybe roasting or baking apples and serving them with some sort of sauce that I could spoon over everyone's but my own. Or perhaps I could serve them with ice cream or something.
Does anyone have any inspiration for me?

If you have a grill pan, it would be quite easy to grill some stone fruit or my favorite, pineapple rings. Then top them with ice cream or coconut sorbet, yum!

How about one of these and some ice cream and the roasted apples. I haven't tried any of them though...

Butterscotch Sauce

3/4 cup brown sugar -- packed
1/2 cup light corn syrup
2 tablespoons butter or margarine
1/2 cup whipping cream
1 teaspoon vanilla
Combine brown sugar, corn syrup, and margarine in a small saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute; remove from heat. Stir in cream and vanilla immediately. Cool; store in the refrigerator. Stir before serving over ice cream, puddings, or desserts.
Makes about 1 1/2 cups.

Caramel Fondue

1/2 cup butter
2 cups brown sugar
1 cup light corn syrup
2 tablespoons water
1 – 15 ounce can sweetened condensed milk
1 teaspoon vanilla
In a small saucepan, melt butter over medium heat. Stir in sugar, corn syrup and water. Bring to a boil. Stir in condensed milk, simmer, stirring constantly until mixture reaches thread stage 230° (please see Candy Temperatures and Tests). Add vanilla. Place over fondue burner. Dip apples, marshmallows, pineapple, popcorn or oranges.

Hot Butter Rum Sauce

1 c firmly packed brown sugar
1/2 c butter
1/8 tsp salt
1 can sweetened condensed milk (not evaporated) -- (14 oz)
1/4 c dark rum
2 tsp vanilla
2 10 oz decorative jars
In med saucepan combine brown sugar, butter, salt and sweetened condensed milk. Bring to a boil over med heat stirring constanty to prevent scorching. Cook till sugar is dissolved. remove from heat
Stir in rum and vanilla. pour into jars. Cover. Store in refrigerator. Serve warm.

How about just a fruit and cheese platter for dessert, maybe with a nice dessert wine?
