Tonight I made the Chicken Thighs with Sweet Red Onions and Balsamic Vinegar. It was very easy to put together, and has ingredients I always have on hand. I served it with leftover rice but think I would have liked it with mashed potatoes better, as CL suggested. I give it an 8, DH gave it only a 6.
Last night I made the Vegetable Fried Rice with Pecans and Ginger. Not difficult. DH really loved this one, but I wasn't as crazy about the asparagus in this recipe. (Normally I love asparagus in anything.) Next time, I'll try broccoli. The pecans really make the recipe. Had to use reg. mushrooms for the shitakes since my store doesn't carry them any more, but it was an acceptable substitution. Oh, and I threw in one cooked pork chop sliced in thin strips to fill it out a bit more, and just had it as a one-dish meal. DH: 9. Me: 7.
