View Full Version : Need help finding recipe from June or July 2000

There must be something about the CL recipe search that I don't understand, because I have never been able to find the recipe I am looking for by using it! Anyway, I would like to make the Chicken Caesar Salad from June or July 2000 tonight. I think it was included in an article on main dish salads. I have the issue at home but, like an idiot, I cut out that recipe. I really only need the instructions for the dressing. If anyone could post that, I would really appreciate it. Thanks. Gaye

CHICKEN CAESAR SALAD
Salad:
1 (2-pound) whole roasted chicken, skinned
11 cups romaine lettuce (about 1 1/4 pounds)
1 cup red bell pepper, cut into strips
Vinaigrette:
3 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 clove garlic, crushed
1 1/2 cups plain croutons
1/2 cup (2 ounces) grated fresh Parmesan cheese
1. To prepare salad, remove the chicken from the bones; shred with 2 forks to measure 3 cups meat. Combine chicken, lettuce, and bell pepper in a large bowl.
2. To prepare vinaigrette, combine oil and next 7 ingredients (oil through garlic) in a bowl, stirring well with a whisk. Pour over salad; toss well. Sprinkle with croutons and cheese; toss gently to combine.
3. Serving size - 2 cups. 306 Calories (47% from fat); 16 g fat; 29.4 g Protein, 2.4 g Fiber; 171 mg Calcium.

Thank you, Alysha! I am anxious to make this again, as I remember it being wonderful (although I recall doubling the dressing recipe, so don't know how light it was!). Gaye

Just so you know there's nothing wrong with your searching skills, GayeC, the recipe search does not contain all CL recipes--just featured ones.
