Susan, I make these weekly and I'm sorry to say, I do not think the batter would hold up overnight. They do freeze great, though. :)

You could always mix up all the dry and wet ingredients separately and keep them in a ziploc baggy or in covered bowls the night before then just mix together when your ready in the morning?
