This was quite tasty! I served it as suggested with grilled rib eye steaks and rolls with garlic butter. DH said I could make it again.... :rolleyes:
The only thing he mentioned was that the balsamic was a tad too pronounced. Next time I might cut back on it just a hair, maybe 1 teaspoon.
Good meal and quick on a weeknight.

Thanks for the review, Susan! I had passed that one by because of the goat cheese as I'm the only one in the house that will eat it. I am thinking feta cheese would be too salty with the proscuitto. Any other cheese substitutions that you could recommend? Or should I just make the salad for myself?! ;)

Come on by next time you're in town, Peggy - we'll enjoy it together! I almost made this Saturday night but went with a different salad w/goat cheese. DBF then announced he's decided he dislikes goat cheese. Drat, missed my opportunity to try this! (Yes, of course I could make it for myself, but I already have loads of "when DBF's away, in the kitchen I'll play" recipes.)

Different cheese??? Hmmmm...Monterey Jack? Fontina?
I'm not a cheese expert, but I agree that feta would be too strong, not only for the salt factor, but with the high amount of balsamic it might conflict there.
The goat cheese really kind of blends into the dressing. Mine did anyway, probably it was finely crumbled. Yummmmm
Why don't they like goat? To me its milder than feta. Just curious.

DD claims it tastes like she just licked a goat. :rolleyes: Not that she has ever actually licked a goat but I guess she has a pretty vivid imagination. She feels the same way about chesse made with sheep's milk. When we were in England last year she ordered a salad with feta cheese (which she loves). She took one bite and claimed that the feta was different. I checked with the waitperson and sure enough, it was made with sheep's cheese. DH just says he doesn't like the taste. No specific reason like licking a goat... :rolleyes:

That is SO funny, Peggy! And my sister said almost the exact same thing! I think goat cheese is wonderful...mmm, that red pepper and goat cheese lasagne from JoC is sooo good. Anyhow, I was wondering about Point Reyes Original Blue in this? It's not too strong and shouldn't be too salty. Or Gorgonzola? Or what about some luxurious triple-cream, maybe one with an herby rind? There's something about a great cheese on a spinach salad....
PS: Feta! Greek, French, Bulgarian, local, sheep, cow, blend. I never know.
