Just discoved the Boyajian orange, lemon, and lime flavorings (courtesy of a neighbor) and decided to make any orange strawberry yogurt breakfast parfait with almonds. Just used plain non-fat yogurt, added only a drop of the Boyajian flavoring, some strawberries and ground almonds. What a treat! The flavorings are superb! I am going to look for more recipes using these. Anyone have any handy? I'm sold on then.

I haven't heard of these flavorings...where do you get them?

Grace, you wouldn't use the same amount of the oils (thanks for clarifying that point) as you would of the zest, would you. A 1/2 tsp of orange oil would be way more potent than 1/2 tsp. of the orange zest, I should think. How about a 1/2 to a 1/4 of the amount of zest called for?

You're right, Carolyn, they don't substitute equally. Those oils are a heck of a lot more potent than the zest is, so 1/2 to 1/4 of what's called for would probably be just right (although on that point, I'm no expert!) But you could start with 1/4 of what's called for and always add more if it didn't taste strong enough for you. Enjoy! And you sure have nice neighbors! http://www.cookinglight.com/bbs/smile.gif

Hi guys - these aren't actually "flavorings", they are oils - the oil pressed from the skins of citrus fruits (almost like using zest). They are indeed wonderful, and very potent, you only need a little bit (1/4 tsp.). They can be ordered on-line, and I know also that Williams-Sonoma carries them in their stores.

As far as recipes, Carolyn, look for recipes that call for zest (lemon zest, lime zest, etc.), and just substitute your oils. You could also add it to recipes that don't call for it, like in biscotti or other cookies and cakes. I bet the Orange Tea Cake would be even more wonderful with the addition of the orange oil, and I have made wonderful biscotti with them as well. You could also add a drop or two to meat marinades, or salad dressings. Good luck and have fun!
