I've seen that one before! I like the way Alton Brown tells you how to make the different kinds of cookies -- and breaks it down by explaining how changing what kind of flour you use, or the amount of each ingredient makes a cookie puffy, chewy, etc.
Guess I'm a bit of a science geek?
