Hi! First and foremost I must say that I have been missing this board since it has been down. However, I have had an excellent weekend of cooking. Here are the reviews:
*Pasta, Beans, and Greens-A must for all spincach lovers. I actually doubled the amount of spinach that the recipe called for. This is not a real heavy pasta dish. Served with a salad this makes a great meal.
*Brocolli Calzones-These were so yummy! I ended up with extra filling though, and wish I could have thought up a good use for it. I believe this was suggested for a quick and easy breakfast, but we had them for dinner.
*Thai Style Pork Stew-This is definitely one of my new CL all time favorites. I did most of the prep work the night before, so all I had to do was throw the ingredients in the crock pot. The only changes I made were adding more garlic, reduced fat peanut butter, and instant brown rice instead of basmati rice. I wasn't quite sure if I would like the lime with it but it complements the other flavors well.

Thanks to your posting, I finally got around to making the Broccoli Calzones! I have had the stuff off and on in the refrigerator for over a month. We had the last night for dinner and they were really easy and good. Thanks for reminding me about that recipe! Now I have to remember to make the Pasta, Beans and Greens....

Thai-Style Pork Stew
Recipe By :Cooking Light, September 1999

Amount Measure Ingredient -- Preparation Method

Stew:
2 pounds boned pork loin -- cut into 4 pieces
2 cups julienne-cut red bell pepper
1/4 cup teriyaki sauce
2 tablespoons rice or white wine vinegar
1 teaspoon crushed red pepper
2 garlic cloves -- minced
1/4 cup creamy peanut butter
Remaining ingredients:
6 cups hot cooked basmati rice
1/2 cup chopped green onions
2 tablespoons dry-roasted peanuts -- chopped
8 lime wedges
1. To prepare stew, trim fat from pork; discard fat. Place pork, bell pepper, and next 4 ingredients in an electric slow cooker. Cover with lid, and cook on low-heat setting 8 hours. Remove pork from slow cooker, and coarsely chop. Add peanut butter to liquid in slow cooker; stir well. Stir in pork.
2. Combine stew and rice in a large bowl. Top each serving with onions and peanuts; serve with lime wedges.
Yield: 8 servings (serving size: 1 cup stew, 1 tablespoon green onions, about 1/2 teaspoon peanuts, and 1 lime wedge).

FYI - The Broccoli Calzone recipe is from March 2001 and the Pasta, Beans and Greens is from April 2001.

Thai Pork Stew..Wow that sounds good. Could you give the recipe? Could it be made in a crock pot too? Thanks!
eks, if these are CL recipes, can you post the issue that they appeared in? They sound wonderful. Thanks for the review!

Made these the way suggested in the book, making the night before...They were so great! Unfortunately though both I and SO thought we'd rather have a soda than our morning coffee...

nope, I was just confused by TIGBOO's post. It seemed out of place. Or maybe I am missing something. I have no idea what that post meant or what it was referring to.
you know what, I still haven't made the Thai stew. But I am glad this post got pushed to the top because it reminds me that I need to make it soon!

oh, I see. the broccoli calzones were suggested for breakfast. I should learn to read. I would have never guessed... Broccoli for breakfast? Yuk.

Valchemist, I was equally confused. Broccoli for breakfast doesn't thrill me either unless it was in quiche perhaps.

yeah, now that I think of it, broccoli quiche would be okay. I just would have never thought of a broccoli calzone for breakfast.
