I just had the best dessert last week, Margarita Pie. It is made with ice cream, tequilla, etc. The crust is made from pretzels. I believe the recipe is from a Neiman Marcus cook book. Has anyone ever had this before? If anyone is interested, I can post the recipe.
Its not low fat!!

I saw some were looking fwd to that recipe. I ran a search & saw this recipe which has has ice cream & its low fat...You can change the crust by using pretzels like N Marcus kind.
Margarita Pie

Weight Watchers - July/August 97
Serving Size : 8 Preparation Time :0:00

4 c vanilla low-fat ice cream -- softened
1/2 c thawed lemonade concentrate -- undiluted
1/4 c tequila
2 tbsp triple Sec
1 6 oz ready-made reduced-fat graham cracker crust

Freeze a glass or metal bowl for 30 minutes. Immediately add first 4
ingredients to bowl; stir well. Return to freezer for 30 minutes.
Spoon partially frozen mixture into crust; cover. Freeze at least 4
hours.

fat - 6.1g

I am so sorry it has taken me so long to post this. At first I could not find my post...oops. I am in the midst of finishing up my thesis and I had not checked the BB for several days! I am usually not such a slacker. Enjoy the recipe, it is very good!


Margarita Pie with Pretzel Crust

½ pound margarine 4 oz tequila
2 ½ cups (~1 pound package) pretzels 1 oz triple sec
1/8 cup sugar 2 whole limes, grated and juiced
3 quarts vanilla ice cream, slightly thawed lime, mint for garnish
6 oz frozen limeade concentrate, thawed

Melt margarine. Crush pretzels in food processor. Stir crushed pretzels and sugar into melted margarine. Mix well. Position mixture in two 9-inch pie pans, pressing firmly into sides and bottom of pans. Freeze 1 hour. Combine ice cream, limeade, tequila, triple sec, grated lime peel, and lime juice in a mixer with a whip attachment. Whip at medium speed until well mixed. Filling should be thick. Pile filling into each crust. Freeze at least 4 hours until firm. Garnish pie slices with fresh mint and lime slices.

(I think the crust was a little too crumbly, so maybe next time I will increase the margarine a little.)
