I thought I saw a search for key lime pie on the old board and thought I would offer one. Note, 7 egg yolks are used; this ends up being less than one per serving which doesn't seem as bad!!!
7 egg yolks, beaten until frothy
add 1 and 1/2 cans fat-free sweetened condensed milk
add 3/4 cups key lime juice
mix until blended
pour into prebaked graham cracker crust shell (I have used Keebler Fat-free)
Bake at 325 for 15 minutes. Allow to set in refrigerator.
Serve with whipped cream
***Best prepared in advance so it has time to set
Serves 8
The recipe is not pretty but it turns out well! Enjoy!

Thanks Kathy! I can ALWAYS use another recipe for key lime pie, and this one sounds goooood. In fact, I have a tiny bottle of Key Lime juice I picked up a while ago when I was in Florida, and this might be just the use for it!

When I saw this recipe, I went to the store IMMEDIATELY to get the ingredients and made it right away. My husband and I had the best key lime pie on our honeymoon 16 years ago. I've spent all that time trying to duplicate that pie, but have never found a recipe with the right taste and texture. When my husband came home, I met him at the door with a spoon full of pie, told him to close his eyes, and popped the spoon in his mouth. His response? "That's it. That's exactly it." The smile on his face was worth a million. This recipe is an exact duplicate of that honeymoon key lime pie. Thanks for posting!

I had also seen the request for a "healthy" Key Lime Pie recipe on the old board. It took me a while to FIND my recipe, but I thought I'd offer it. This recipe is actually the first Key Lime Pie I ever tasted, and I loved it!
2 tsp. grated lime zest
juice & pulp from one fresh lime
8 oz. single serving nonfat plain yogurt
1/2 cup Key Lime juice
14 oz. can fat-free sweetened condensed milk
1/2 cup sugar
1 packet Knox unflavored gelatin (1/4 oz)
9-inch chocolate or graham cracker pie crust
Combine key lime juice, zest, yogurt, sugar and condensed milk in bowl. In smaller bowl, dilute juice & pulp from fresh lime with water to make 1/4 cup. Microwave diluted lime to boiling point, then add gelatin and stir with wisk until completely dissolved. Pour gelatin mixture into bowl with other liquids & mix well. Pour mixture into pie crust and refrigerate overnight.
Optional -- dress with slices of Kiwi fruit or Hershey's syrup after slicing.
