My inlaws will be visiting this weekend and my father in law has celiac disease, so I need some ideas for gluten free/wheat free desserts. I'm especially looking for something special, different from the ice cream and fruit we usually have when they are here. I was thinking about making a pavlova, but it's gotten pretty humid here lately and I'm not sure that it would work out. (I've never made one before, so I don't have experience on my side)

If you have access to a health store go and get the Gluten free pantry cake and sugar baking mix. In the back there's a recipe for white cake which you can then frost or a quick cake mix.
I could also suggest a cheesecake
Ricotta pineapplke cheesecake
Crust
1 1/4 c gluten free cookie crumbs (at health store)
1/4 c ground almonds
3 tab margarine melted
Preheat oven to 375
Crust: Mix crumbs, nuts and margarine. Pat into an 8 inch springform pan or 9 inch pie pan
Filling:
3 eggs separated
1 -15 ounce container ricotta cheese
2/3 c sugar
2 tab cornstarch
1 tsp dried orange peel
1 -8 1/2 ounce can crushed pineapple drained
Beat eeg whites until stiff but not dry. In large bowl, beat together cheese, egg yolks, sugar, cornstarch and orange peel. Stir in pineapple. Gently fold in beaten egg whites. Pour into crust. Bake 40 min or until knife inserted in center comes out clean. Cool
Serves 8
Note: Crushed Gluten free cereal plus 1 tablespoon of sugar may replace cookie crumbs in the crust.
Another solution might be a yellow cake
You can use this recipe as a base or cut in half the recipe for a dessert served with fruit and whipped cream or ice cream
2 1/4 c GF flour mix
3 tsp baking powder
1 tsp baking soda
1 tsp xantham gum (at healthstores)
2 tsp dried lemon peel
1 tsp salt
4 eggs
1 1/3 c sugar
2/3 c mayonnaise
1 c 7 up (diet or regular)
Oven at 350
In med bowl blend flour, b powder, b soda, xantham gum, lemon, salt. Set aside
In large bowl beat together eggs, sugar and mayo until fluffy and lemon colored. Add flour mixture alternately with 7 up beating with a spoon after each addition.
Spread batter into 2 greased and rice floured 8 or 9 inch round cake pans or into a greased and rice floured 9x13 oblong pan. Bake 25-30 mins for round cake, slightly more for oblong cake The top will "spring back" when done. Let cool You can frost or fill with your favorite icing.
Gluten free flour Mix
If you cannot find the mix you can do your own:
6 c white rice flour
2 c potato starch flour
1 cup tapioca flour
Note: If theres no health food close by try a chinesse store they carry tapioca, rice flour etc...Good luck!
