I was taught to mash some of the berries after adding the sugar; then to let them sit out at room temp for an hour or two.

Add Cointreau, or Drambuie, or Chambord, or Wine, LOL..should I go on? http://www.cookinglight.com/bbs/wink.gif They really are heavenly with liqueur added. *Hic* Hey, if we can eat drunken goat cheese, why not drunken strawberries? http://www.cookinglight.com/bbs/wink.gif Actually, this results in what are called "macerated" berries. Just add enough liqueur to "wet" the berries, along with just a bit of sugar. Let them rest for a short time. They will then "bleed" their own juices. Yummy!

I've never tried it but how about using Splenda, which is a new no calorie sweetener made from sugar (haven't figured that out yet http://www.cookinglight.com/bbs/wink.gif !). I gave a packet to a co-worker to use on her fresh strawberries that were too tart and she said it really improved the taste.

Jeez, there were no responses when I started posting this and looking for the website!

I usually sprinkle them with just a little bit of powdered sugar, then let them sit at room temperature for a while.
MMM...now I'm in the mood for strawberry shortcake!!!

I used Splenda on my last batch of strawberries, they were wonderful. Also there is a CL recipe called Dessert Nachos and it is great, it uses Amaretto!

This is how I eat mine: I wash and slice them in half. I sprinkle on some home-made vanila sugar and bring them to room temperature. A couple of times when I've gotten impatient, I put them in the microwave. If you do this, watch them closely. Once, I ended up with strawberry stew!

Darn! I just saw that you wanted to do this WITHOUT adding a lot of sugar. Let me just say that I use very little sugar. And because it is vanilla, I get an extra flavor boost.

What kind of strawberries are you buying? If they're megaberries shipped in from another state, then they'll need an addition for sure. Strawberries are a very fragile fruit & the ones that have to be shipped are bred specially for that, and are picked waaaaay before they're ripe. That's why a lot of grocery store berries don't taste like real strawberries. But if you can get farm-fresh berries locally, they'll probably do well without adornment, just sliced to bring out the juices. To me, fresh strawberries are like fresh tomatoes--the good ones are worth waiting for! http://www.cookinglight.com/bbs/biggrin.gif
