How do I know what type of goat cheese to use when the recipe doesn't specify it? I had been using feta but now I realize there are several kinds. Would chevre be the appropriate cheese unless Feta is specifically called for?

seems to me we talked about this once before...
when a recipe calls for goat cheese, I think they normally mean the soft creamy kind (chevre). When they want you to use feta, they specify feta. that's not always the case, but I think for the most part that is true.
you could do a search to try to find the goat cheese thread where this was discussed if you want some more opinions.
