View Full Version : ISO: Roasted Red Pepper Dip recipe?

I'm trying to track down a recipe for Roasted Red Pepper dip using cream cheese. I have the CL Spicy Roasted Red Pepper and Bean Dip recipe that I will probably use, but I thought I remembered seeing one on this BB that combined cream cheese and roasted peppers with spices. Didn't find one when I searched the BB.

If I go with this CL recipe, has anyone tried it? I've just been asked to bring a lowfat spicy dip to a party tomorrow, and I've got a huge jar of roasted red peppers I figured I'd put to good use! I've never used tofu before and this recipe calls for it, so any input would be appreciated! Thanks! http://www.cookinglight.com/bbs/biggrin.gif

The Spicy Roasted Red Pepper and Bean Dip is one of my all time favorite recipes! Everyone I have made it for loves it. I think it calls for parsley, though, and I use cilantro. 5 stars IMHO! http://www.cookinglight.com/bbs/biggrin.gif

I have made one before - but I don't have the recipe - I may be able to get it over the weekend - but that would be too late for you. If I can remember - it was jarred roasted red pepper & sour cream plus some minced garlic. Put it in a food processor until smooth. There was probably something else in there (maybe cream cheese) - maybe someone else will have had it? It's really good. Light, but with alot of flavor. Serve with veggies or chips.
I'm actually glad you reminded me of this.

You could probably experiment a little - blend up a cup or so of the red peppers & add sour cream, garlic, maybe a dash of hot sauce until it tastes good to you. Cream cheese may be in there too I just don't remember - how frustrating!

Although this isn't exactly what you asked for I thought I'd post it anyway. It sounds good.

Roasted Red Pepper Dip

The combination of ginger, garlic and jalapenos brings out the sweetness of roasted red peppers; serve with low-fat sesame crackers and crudites.

This Recipe Serves: 16

Ingredients
7 ounce jarred roasted red bell peppers
1 clove garlic
1 piece fresh ginger
1 jalapeno pepper
1 scallion
2 teaspoon reduced-sodium soy sauce
2 teaspoon rice wine vinegar
1 teaspoon honey
1 piece white bread

Preparation
Estimated Cooking Time: 10 mins.

In a blender or food processor, combine roasted red peppers, garlic, ginger, jalapeno, scallion, soy sauce, vinegar and honey or sugar. Process until smooth. With the motor running, add breadcrumbs, a little at a time, until the dip is thick and creamy. Taste and adjust seasonings. Transfer to a small bowl. (The dip can be stored, covered, in the refrigerator for up 2 days.)
