Please post your best/favorite recipe for oven fried chicken. I am packing a picnic lunch for my husband. Thanks!

Here's one that we like:

Desk Set Oven-Fried Chicken Breasts

Amount Measure Ingredient -- Preparation Method

1/4 cup dry breadcrumbs -- (1/2 cup)
1 tablespoon grated Parmesan cheese
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon garlic salt
1/4 teaspoon ground red pepper
1/3 cup low-fat buttermilk
4 skinned chicken breast halves -- (6-ounce)
Cooking spray
1 tablespoon margarine or butter -- melted

1. Preheat oven to 400°.

2. Combine first 6 ingredients in a shallow dish. Place buttermilk in a shallow dish. Dip chicken in buttermilk; dredge in breadcrumb mixture. Place chicken, breast sides up, in a jelly-roll pan coated with cooking spray. Drizzle margarine over chicken. Bake at 400° for 40 minutes or until done.

Note: Good with Potatoes Parmigiana.

Yield: 4 servings

This is our favorite...

Oven-Fried Cinnamon Chicken

2-3 lbs chicken, cut up (or 4 B/S breasts)
1/2 cup flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp turmeric
1/2 tsp black pepper
1 egg
2 TBS milk
1/2 cup breadcrumbs
2 TBS vegetable oil

Heat oven to 375 degrees. Combine flour, salt, cinnamon, turmeric and black pepper, set aside. Beat egg and milk. Coat chicken pieces with flour mixture, then add breadcrumbs to remaining flour mixture. Dip chicken pieces into eggs, then coat with crumbs. Arrange in roasting pan. Sprinkle with oil, then bake until crisp and brown, about 40 minutes.

Note: I have omitted the oil and sprayed the chicken with cooking spray and still had wonderful results! I also sometimes substitute 'Panko' for the breadcrumbs, which makes the chicken crispier. Panko is a Japanese breading that is available in most supermarkets in the Asian section, or in Asian markets It comes in pretty big chunks, and I just crush it with a rolling pin to make it more crumby! Have been making this one for years. I usually add some cornmeal to the bread crumbs and also add italian seasoning. You can substitute white wine for the sherry.

2 Tablespoons Dry Sherry
2 1/2 Chicken Breasts -- Skinned/Boned
1/2 Cup Progresso Plain Bread Crumbs
2 Tablespoons Yellow Cornmeal
Salt & Pepper -- Freshly Ground
1 Teaspoon Paprika
1/2 Teaspoon Dry Sage
1/2 Teaspoon Dry Thyme
1/2 Teaspoon Dry Basil
PAM

In a shallow bowl add sherry. Add chicken, turn to coat.
In another bowl, combine bread crumbs, cornmeal, salt, pepper, paprika, sage, thyme and basil. Dip each chicken piece in crumb mixture to coat.
Spray suitable shallow baking pan with pan. Arrange chicken, skinned side up, in pan. Bake, uncovered, in a 450 (425 convection) degree oven until meat is no longer pink; about 20 minutes.
Notes: If using chicken with bone, increase baking time. Original recipe added garlic to sherry. Did not like!

If you have the recipe for the potatoes parmigiana that is a suggested side dish, would you mind posting it? Sounds like a great combination. I am making oven chicken tomorrow night using your recipe. Thanks!

Potatoes Parmigiana

Amount Measure Ingredient -- Preparation Method

1 1/2 cups water
1/2 teaspoon salt
1 each chicken broth, packet
2 teaspoons Tabasco sauce
4 small baking potatoes -- peeled, sliced
2 medium green onions -- sliced
1/2 teaspoon salt
1/2 cup Parmesan cheese -- divided

1. Heat oven to 400 degrees. Heat water, salt, chicken broth packet and Tabasco to boiling in an ovenproof 12 inch skillet or casserole dish over high heat. When water has been boiling about a minute, stir well to dissolve chicken powder. Add the sliced potatoes, green onions, salt and 1/4 cup of the grated parmesan cheese. Toss to mix well. Level the mixture and transfer the skillet to the preheated oven. Bake, uncovered, for 25-30 minutes at 400 degrees until potatoes are tender.

2. Remove from oven, increase heat to broil. Sprinkle remaining cheese over potatoes; return skillet to oven and broil about 3 minutes or until potatoes are golden.

Yield: 4 servings.

Jewel, I just tried your Oven- Fried Cinnamon Chicken and it was two thumbs up by me and my DH. YUM!!!! It had a nice crunch to it and the house smelled great when it was cooking. Thanks for posting.

ElinorC, I tried your chicken recipe yesterday. It is also very good. It is a very easy, quick dish to make on a weeknight. We will be making it again sometime. My DH could not believe it was lowfat! Thanks for posting the potatoes parmigiana recipe. Will be trying it soon!
