I just thought I would share this. I wanted to have a "Wine Tasting" party, but also get a chance to try out some brand new recipies for people who appreciate my "healthy" cooking. DH is the type that when hears/sees a tofu wrapper in the trash RUNS to Burger King. So I invited some of my girlfriends to a "Talk and Taste" Party. I asked them to bring a bottle of wine or 6 pack of fav. adult beverage and I would supply all the food. This is what I am serving: Eggplant Turnovers, Carmelized Onion, Walnut, and Gorgonzola Bruschetta, Roasted Red Pepper Spread on Cucumbers,Spinach Balls, Rocky Road Snack Cake CL May 01, and Chia Tea Biscotti CL 2001. I have not tried any before, but figure if I follow all directions perfectly, nothing can be too bad.

What a great idea! It is not only a great idea to try different recipes but also to taste different wines. I have been tasting some Reislings(sp) and love the taste. http://www.cookinglight.com/bbs/smile.gif

What a great idea. I hope you don't mind if I steal your idea and invite some of the local girls over.
Can you please post the recipe for the eggplant turnovers? I love eggplant, but DH doesn't so it would be a great time to try it out.

My mom, aka maizeyoats, lives right next door in Wilbraham, MA. (I went to Minnechaug High School.) I am sure she would love to attend. http://www.cookinglight.com/bbs/wink.gif Wow, that menu sounds wonderful!! So would I.
And I'd love to see the turnover recipe too, if you get a chance.

Yes, Mamasue you have been tasting those wines...haha See Mamasue likes sweet wines. I on the other hand the sister loves Fuisse, Cakebread Cab, and Merlot's. I do agree older sister that the Reisling was a very good choice on my part.. ha ha...
This wine tasting party sounds like a great idea. I think my sister Mamasue should have one.....Sue?

Eggplant Turnovers
1 medium eggplant(skin left on)sliced into 1/3 inch slices, no thicker
1/4 c. mayo
1/3 c. bread crumbs
1/2 t. dried basil
Salt and pepper to taste
Filling
5 ounces soft mild goat cheese
1 small garlic clove through a press
2 T. very finely chopped roasted red pepper
1/2 t. dried oregano
1/4 t. dried thyme
1. Preheat the broiler
2. Brush the eggplant lightly with mayo. Mix the bread crumbs, basil, salt, and pepper. Press each side of eggplant in crumb mixture. Place slices on baking sheet. Broil until golden brown on each side.
3. Let eggplant cool, do not stuff warm.
4. Mix filling. Spread a thin layer of flling on each slice. Fold slices over to make turnovers. Serve at room temp. (May be made upto 24 hours chilled in advance, just let them warm up to room temp)

This sounds like a great party plan. My MIL started a group called "The Dutch Lunch Bunch", they meet once a week. During their winter's which can be brutual with the snow, they prefer to stay in at one another's homes for lunch.
