View Full Version : What's everyone cooking for Memorial Day gatherings?

Kind of a follow up to Dana's query about what you're doing. I'd be interested in hearing about what you're cooking and eating this weekend. Are you cooking out or in? Are you going for quick and simple to fit cooking into a busy schedule or taking advantage of the extra day to prepare something special?????

We're cooking lots of things! On Saturday we're having hors d'ouvres at our house before a graduation ceremony. Since I'm doing the cooking, they're all vegetarian (which may cause some consternation among my SO's relatives). Some easy ones... cheese and crackers, veggies and a buttermilk-peppercorn dip, marinated olives, etc. And then a few that are more effortful... crostini with a white bean-basil spread; stuffed mushrooms; mini pizza biancas.

Saturday night,we get to go out to dinner...hooray!

Sunday morning the aforementioned relatives come to our house for a light breakfast of bagels, muffins and fruit. I'm making the muffins. Everything else comes from the bakery.

Sunday afternoon after graduation ceremony #2 we're having a cold buffet, again at our house. Cold cuts, cheeses, bread, some fun condiments (aioli, homemade pickled onions, a variety of mustards, ancho chili mayo, etc.), and three salads... potato with artichoke hearts and mustard vinaigrette; sesame noodles, and a marinated shredded carrot and cheddar salad. Grand finale = a strawberry and cream cake. Phew!

If any relatives are still hanging around on Sunday night, we're ordering pizza. http://www.cookinglight.com/bbs/smile.gif

Monday I have to work; I expect we'll be munching on leftovers from the weekend. No traditional bbq for me this year. http://www.cookinglight.com/bbs/frown.gif

I have several nice size pork loins in the freezer so I plan on grilling them. One will be marinated in Margarita mix and the other will marinared in Chipotle Steak Marinade that Jewel posted on another thread. With this I plan to serve a hash brown casserole, Antipasto Salad Bowl, Baked Triple Bean Potand maybe a few other things. Any ideas to add? I haven't decided on desserts yet.

For the bbq Monday, we're keeping it simple.

We're serving as appetizers:
marinated grilled mushrooms, skinny baguette slices, homemade hummus, fish spread, and assorted fresh veggies.

For dinner: Cobb salad, bratwurst & Kosher dogs, & grilled veggies (squash, onions, asparagus). I might do beer soaked baked beans as well.

For dessert, if I'm lucky, the strawberry guy will still be at the Farmer's Market tomorrow when I get there, and we'll just have nekkid strawberries for dessert. Yum!

I havben't decided yet, but I want to make that shrimp/angel hair salad with olives and feta. We're still finishing up laying a flagstone patio and relandscsaping the yard, so it will probably be something simple on the grill.

Saturday barbeque with Adobado Pork Tenderloin (May 1999) and Chili-Roasted Potatoes (June 1999). Probably with lots of beer to cool down the spiciness...

We're planning on having Gail's Canoehouse Grilled Tuna. With it, grilled vegetables,
a salad with toasted pecans, gorgonzola cheese with garlic dressing and to add more spice to our day--wasabi mashed potatoes!

Haven't come up with dessert yet, but thinking of something with strawberries.

For appetizer we're having southwestern egg rolls. I'm cheating on these and already picked up some ready made ones at Costco, so thought we'd give them a try with some dry white wine.

It will be a hot day for us--probably around 110 degrees, so we're planning on hanging in our pool with family over. Have a Happy and Safe Memorial Day to Everyone...

I'll be doing a bit of cooking this weekend...

On Saturday, I'll be making the Eating Well Died-and-Went-to-Heaven Chocolate Cake based on the wonderful recommendations from folks on this board. This is for a small family gathering on Sunday.

On Monday, I'll be attending a BBQ at home of sis and her family. She's having hamburgers, sausages...but is also including Gardenburgers for me (thanks heaven for supportive family members!)

I'll be making the Wild Rice and Quinoa salad that I reviewed earlier on this list (think it was in April issue). I'm also going to make "Zesty Bean Salad" and a spicy green bean salad from one of my Weight Watcher's cookbooks.

Looking forward to some great food this weekend!

I will be spending the weekend camping with no electricity or running water.... http://www.cookinglight.com/bbs/smile.gif but will be doing a little advance cooking and a lot of cooking while there. I will be making my grandmothers potato salad in advance for one of the meals (served with bratwurst). We are grilling steak another night.

I go on this camping trip every Memorial Day weekend with around 40 other people. As I enjoy it so much, I usually do a great deal of the cooking. We will do sausage, biscuits and gravy, bacon and eggs one morning, snacks later, maybe chili... you just never know, but it is always good.

Smoking a whole pig with all the traditional sides and a few others - coleslaw, potato salad, 3 bean salad, asparagus/artichoke salad, pickles, BBQ sauce and white bread, popsicles for the kids and sliced melon. Real Helman's all the way - so not your CL kind of picnic. If you can think of anything else just tell me! Happy Memorial day everyone. Heather

I don't really know. We're not having anyone over, but we may be going to a friend's house. In that case, I'd probably be bringing CL's Lemon-Swirl Cheesecake. I've been wanting to try that for quite a while now, but I don't like to have a whole cheesecake sitting around the house http://www.cookinglight.com/bbs/smile.gif .

I just went shopping for the week today ( http://www.cookinglight.com/bbs/eek.gif ), so this weekend will involve one or more (but definitely not ALL) of the following:

I think they are all CL recipes...

Asparagus and Ham Casserole
Smoked Gouda Risotto
Chicken Strudel
Black Bean Enchilada Casserole
Mini Spanakopitas
Zabaglione

But, it's garage sale weekend, so we'll be a bit busy to do too much cooking...
