Sorry to start a new thread, but I wanted to try and get your attention re: the Chicken Enchiladas mentioned in the signature recipes thread (I would like to make some tonight). MelissaAS, you mentioned Chicken Enchiladas in CL 1999. I found Cheese and Chicken Enchiladas on pg 148 of CL Annual Recipes 1999. It that it?

Longhorn, you mentioned a Chicken Enchiladas recipe from a cafe in El Paso. The recipe I found was sent from a woman in Calif and does not mention El Paso. Would you please post the recipe from the cafe in El Paso? Thanks

Sorry- I've been away from my PC at a conference. You're right- it's the Cheese and Chicken Enchiladas that are our favorite. Sure to please- one hint, I can't find "Green Taco Sauce" around these parts so I use mild red taco sauce and all is well. Enjoy!

What a coincidence that I came across this message! I did a search looking for another old thread....
Anyway, I am sorry it took me sooooo long to see this. There was a period where I didn't check into this site for a few weeks. Must've been then!
The chicken enchilada recipe I mentioned was from an issue last summer. There was an article about efforts in the City of El Paso to get the resident to eat healthier and exercise. CL redid some of the recipes from favorite El Paso restaurants. This one was from the L&J Cafe.
I will try to find time to post it this weekend. If anybody knows which recipe I am talking about and can post it from Mastercook that would be great. I'll have to type it in.... Which I don't mind, because it really was a fabulous recipe.
