Anyone out there have a recipe for a healthy version of fried zucchini? I'm looking for something like Carl's Junior.

I'd like to second that request..I've been known to justify eating them in pubs because squash is healthy....I once tried a recipe where they were baked in bread crumbs but it didn't go over well.

I tried the baked one too, and yuck!! I had to put them into a "Zucchini Parmesan" covered with sauce and cheese before they were edible!
Rockydog, I ALWAYS fry zuchini, mainly in the summer, and personally, I just do it! http://www.cookinglight.com/bbs/smile.gif I don't think it's that bad! After all, you're looking for a recipe for "fried zucchini". And, it's delicious! I use olive oil and not a lot! If you're looking for a recipe, I can post how I do it. I definitely do NOT deep fry them.

Dunno if it's CL's Crispy Zucchini Coins that you ladies tried and didn't like, but I'll mention them just in case, because they might be what rockydog's looking for. According to this thread, several people seem to have enjoyed the recipe.

I don't get this zucchini fascination you people seem to have. My mother's been addicted to the fried stuff for about 15 years. She used to work 15 minutes outside of town, and she or her co-worker would wait until the boss left for the day around 2pm, then high-tail it to that drive-in restaurant for a take-out order. Took them almost an hour to make the round trip, but didn't make any difference to either of them. They were addicted!!

I don't think there is any way that you can make that stuff healthy! If there is, please let me know so that I can make a 'healthy' Fried Mozzarella Stick, which happens to be MY addiction, dipped in ranch dressing instead of marinara sauce... http://www.cookinglight.com/bbs/biggrin.gif Mom raised me right, I just picked the 'correct' addiction: Cheese!!

My mother makes a very good zucchini dish...She takes the small zucchini..and shreds it...squeezing out out all the water. She adds a little olive oil and garlic in a fry pan (small teflon) and sautes not too long or the garlic becomes bitter. She then places the shredded zucchini in the pan and saute's until cooked. Then adds a little parmasan cheese/or romano (fresh grated of course) none of that green can stuff..haha a little pepper to taste and it is quite a good side dish...Right Mamasue?
Options - a little red pepper if you want it with a little zing..(I don't but those that want to).

Those were EXACTLY the ones I was refering to, the coins! They were awful.

Here is about what I do: combine bread crumbs(I use seasoned) and cornmeal, 1/2 and 1/2. I add some seasonings to it, like s & p, garlic powder, etc, but not too much. Then I slice the zucchini, dip them into eggs, egg beaters or eggwhites, then into the crumb mixturee. Then place them in a hot fry pan with a little olive oil. You'll need to add a little more oil as is needed. Flip when cooked slightly brown on one side. When the other side is done, transfer to a papertowel to "drain". When cooled, I usually add a little salt and then top with shredded(not grated) parmesan. I grew up on these and they are wonderful!!! http://www.cookinglight.com/bbs/smile.gif You're getting me excited for my zucchini to grow in my garden!!

Here is one that I have tried. We liked it. Usually though, I cook my zucchini with tomatoes. I'll post the recipe if you like.

CRISPY ZUCCHINI SPEARS

Amount Measure Ingredient -- Preparation Method

4 Medium Succhini -- Sliced/lengthwise
1/4 Cup Cornmeal
1/4 Cup Flour
1/4 Cup Parmesan -- Grated
1/2 Teaspoon Salt and Pepper
1/4 Teaspoon Paprika
1/4 Teaspoon Oregano
Eggbeater (1 egg) or?

Slice each zucchini lengthwise to make 8 spears. Combine cornmeal, flour, parmesan, salt, pepper, paprika and oregano in bowl. Dip zucchini spears in egg and then in cornmeal mixture. Place on baking sheet coated with PAM. Bake in 450 (425 convection) degree oven 15 minutes.
