3 lg egg whites
1 C sugar
1/3 C water
1 tsp lemon rind
1 tsp vanilla extract
1. Preheat oven to 350 deg.
2. To prepare cake, coat a 13x9" baking dish with cooking spray; dust with 1 Tbs flour.
3. Place salt & 4 egg whites in lg bowl; beat with mixer at high speed until soft peaks form. Gradually add 2/3 C sugar, 1 Tbs at a time, beating until stiff peaks form. Place 1 tsp vanilla & eggs in a lg bowl; beat until thick & pale (about 3 minutes). Gently fold egg white mixture into egg mixture. Lightly spoon 2/3 C flour into dry measuring cup; level with a knife. Gently fold flour into egg mixture. Spoon batter into prepared dish. Bake at 350 deg for 20 minutes or until cake springs back when touched lightly in center. Cool 5 min in pan on a wire rack.
4. To prepare the milk mixture, combine the half-and-half, condensed milk, and evaporated milk. Pierce the entire top of cake with a fork, and pour the milk mixture over the cake.
