I used to have a recipe for a cake that started with a golden cake mix, and after baking, you poured a mixture of pineapple juice and coconut and milk (maybe??) over it while still hot, and then ice the whole thing with drained crushed pineapple and cool whip before sprinkling with more coconut.

It's not high brow cuisine, nor light, but it's darn yummy! I can't find my recipe, but want to make it for a potluck.

Does anyone have a recipe for this?

Here's one that's similiar, no coconut but it seems that you could easily add some!

Pineapple Poke Cake

1 pineapple cake mix, baked according to pkg directions in a 9x13 pan
1 14 oz can sweetened cond. milk
1 12 oz jar pineapple ice cream topping
1 8 oz frozen whipped cream
1 8z crushed pineapple, drained

Allow cake to cool for 5 to 10 minutes in pan. Use handle of wooden spoon to poke holes every 1 1/2" across cake. Pour condensed milk evenly over cake and allow to cool completley. Spread cake with pineapple topping and then with whipped cream. Sprinkle crushed pineapple evenly over top and chill.

This pina colada cake from Janet is made with a cake mix, pudding, coconut milk, sweetened condensed milk, coconut, and pineapple.

INGREDIENTS:

1 box yellow cake mix
1 can coconut milk
1 can sweetened condensed milk
1 large container whipped topping
1 cup chopped walnuts or pecans ( I use more)
1 can drained crushed pineapple (reserving the liquid)
1 cup shredded coconut ( I use more)

PREPARATION:

Bake cake according to directions in a 9x13-inch baking dish. While cake is baking mix the coconut milk and condensed milk together well. When cake is done take a wooden spoon and poke holes through the cake. Pour the coconut and condensed milk mixture in the holes and on top of cake. Spread the crushed pineapple on top of cake and some of the liquid. Let cake cool and then mix the coconut and cool whip together and spread on top of cake and sprinkle with nuts. Refrigerate until very cold before serving.
