This is a fabulous recipe! My dh and I had it tonight and were wowed! It's so easy! I highly recommend this! I used a hot southwestern salsa and served it over long grain brown rice. Delicious! Thank you ever so much, almiter, for posting this recipe! http://www.cookinglight.com/bbs/biggrin.gif

I made this last night and loved it to the point of eating the leftovers for breakfast this morning! I also used brown rice. However, it was too spicy for my husband, so I have to figure out how to please us both. I have not enjoyed a recipe so much since I discovered paella!

We have made this alot. We really like it. It is easy enough to make that my husband will cooked it. We make couscous with it.

McSix --- Try a mild salsa.

Thank you for this recipe. We had it last night and really liked it. My husband like it so much he wanted to serve it for our Memorial Day guests but I already had other menu plans. It's something we will have again and again.
Susan thanks for reminding everyone of this recipe. I didn't see the original post so appreciate it.

Funny, my husband loved this dish; I found it gross -- raisins and cinnamon just didn't go well with the salsa. Oh well. He gets the leftovers!
