Thanks Mamasue! That's a recipe I'll look further into, once I figure out a better way to grate ginger. I'm resisting buying that ceramic ginger grater at Williams-Sonoma, but my box grater is just making a mess of it. One of the reasons I tried the CL Double Ginger Cookies is because it used crystalized ginger, and it saved me from grating my own! Little did I know I'd buy an inferior and tasteless crystalized ginger and end up with inferior and tasteless cookies! http://www.cookinglight.com/bbs/eek.gif
Wish there was nutrition info on that recipe, but did I read that one right?? Roll into 1/2" balls? I'd think the cookie would end up looking like a small 'Nilla Wafer!! Thanks again! http://www.cookinglight.com/bbs/biggrin.gif

Jewel....if you don't have a ceramic grater than you can use the zester (looks like a rasp as in the picture). Yep, the square grater will not work. Ginger is stringy and tends to get all clogged up. Why not substitute and use your crystalized ginger! Oh and I am sure the balls will flatten out as they bake. One will never know until one tries! http://www.cookinglight.com/bbs/biggrin.gif

I buy grated ginger in the produce section of my supermarket. It comes in a small jar, and I can hardly tell the difference between that and the fresh grated stuff.
