I had another great weekend of CL cooking. On Friday night, I made the Mostaciolli Spinach Bake from the CL complete cookbook. It was wonderful-a definite for spinach lovers. I did this one in 2 8X8 pans and froze one for later. Yesterday, I made the Whole Wheat Raisin and Walnut bread from CL Complete. It was pretty good. It is not a real sweet bread. My mom toasted it for breakfast this morning and spread a little butter on it. This is a very hearty bread. Tonight's dinner was perfect. We had the Turkey Meatloaf (March 2001), Mashed Potatoes (CL Complete), and green bean bundles. I made a couple of changes on the meatloaf:
-added some chopped green bell pepper and onion
-used 1 pound ground turkey and 1 pound lean ground beef
The mashed potatoes were good and made a lot. I added a little more salt and pepper to mine after they were cooked because they were a little on the bland side.
I would like to do the meatloaf next time in muffin tins to freeze for later. What is the best way to do this? Any suggestions would be great. I need as many freezer meals as possible.
