View Full Version : ISO: salad/salad dressing ideas for T-giving

Being that this is my first thanksgivng I wanted to make an easy appetizer. So what's easier than salad? I recall someone posting a salad recipe with roasted pecans, I think but can't find it now. I thought it would be nice a fall item to have on the menu... can someone direct me to the thread? Also what other fall items should I add to the salad, maybe craisins, sun dried tomatoes?

I also need a dressing, maybe a vinegarette? any help would be much appreciated.....

There was a salad with apples and pears in the October issue that had a dressing made with apple juice. It also had cheese and nuts. I thought it was one of the best salads I had ever eaten!

I found this recipe on the Ocean Spray website & thought the dressing sounded yummy. You could add mandarin oranges, pears or apples to the salad to beef it up a little. Dorothy

CRANBERRY SPINACH SALAD WITH WARM HONEY DIJON BACON DRESSING

Ingredients:

SALAD
1 6-ounce package salad spinach
1/2 cup Ocean Spray® Craisins® Original Sweetened Dried Cranberries
Red onion slices

DRESSING
4 slices bacon or turkey bacon, cooked crisp and crumbled
1/2 cup plain or orange-flavored honey
1/2 cup lime juice
2 tablespoons Dijon mustard

Directions:

Wash and clean spinach. Divide evenly among 4 salad plates. Top each with 2 tablespoons sweetened dried cranberries and onion slices.

Combine dressing ingredients in a small glass mixing bowl using a wire whisk. Heat in the microwave on HIGH for 1 minute or until warm. Drizzle on salad.

Makes about 1 cup.

For holidays, I always get requests for CL's Spinach Salad with Nectarines and Spicy Pecans. You can find the recipe here (http://food.cookinglight.com/cooking/recipefinder.dyn?action=displayRecipe&recipe_id=549712) . Instead of the prosciutto, I sub bacon and for the nectarines I sub pears. The pecans add a wonderful spice!
