Here's the background: I had a BBQ on Saturday for my son's 3rd birthday. I invited whole families - so I had 8 children and 14 adults to feed. As I did not expect the adults to eat Batman birthday cake, I got up early and made the blueberry pound cake that is now famous from CL.
I screwed up. At some point, I added too much liquid and the batter leaked out of the tube pan and what was left of the cake was soggy and ugly.Sigh.
On a time limit - what do I do? Rely on the fastest good dessert in my arsenal: CL's mandarin cream delight. It seriously takes almost no time at all, and garnished with mint leaves, everyone was so impressed with the appearance AND the taste. http://www.cookinglight.com/bbs/smile.gif Thanks CL!
Now - what I would like is to have a few other life saver recipes on hand. Do any BB'ers have suggestions?
