Here's an interesting "light" recipe I found on the OnHealth.com website. It's a cross between potato salad and pasta salad.
Potasta Salad
1/2 lb red potatoes, cut into 1/2-inch strips
1/4 lb penne pasta
1/2 lb green beans, cut to 2-inch pieces
1/4 cup chopped flat leaf parsley
2 tablespoons fresh tarragon or basil or 1/2 tsp dried
1/2 tsp salt
3 tbls olive oil
2 tbls dry vermouth or white wine
1/2 small red bell pepper, slivered
1 garlic clove, minced
1/8 teaspoon ground black pepper
Place the potatoes in enough lightly salted water to cover and heat to boiling. Cover, reduce heat to low and simmer until fork tender, about 10 minutes. Remove potatoes with slotted spoon and rinse with water to remove any extra starch and cool them so they absorb less dressing. Add the pasta to the boiling water and cook 10 minutes. Add the green beans and cook 5 minutes more or until both the pasta and beans are tender-crisp. Drain and rinse under cold water.
Toss the potatoes, pasta and green beans with the remaining ingredients. Makes about 8 servings.
Nutrients per serving: 128 calories, 3 grams protein, 18 grams carbohydrate, 3 grams fiber, 5 grams fat, 0.5 grams saturated fat, 0 milligrams cholesterol, 150 mg. sodium.
