It's a blustery, cold day, so we've decided to have some comfort food tonight: Three Bean Chili with Chive-Flecked Dumplings from Fresh from the Vegetarian Slow-Cooker. What about you?

It's still warm here so I am doing grilled salmon cakes with lemon mayo sauce thingy and acorn squash.

Here's my thought:
1. Boil fettucine
2. dump boiling water over chopped fresh spinach to wilt
3. mix pasta, spinach and warmed alfredo sauce (Contadina ;) )
What do you think? What could I add to this? I'm also planning on salad and maybe garlic bread.

Well...Alex is eating at my mother's house. Michael will hit fast food (probably Chipotle) and I'm on my own. I'm thinking it will be fast food as well since I don't have leftovers and I don't want to cook.
Obviously, I don't think you will get any inspiration from my plans :p

Not cooking for awhile - too much going on with JUST moving into a new house and inlaws coming in exactly one week for Thanksgiving. :eek: I suspect Subway is in order. However, I might make those Apple Muffins heavy hedonist posted just to soothe my nerves.

I actually menu planned this week :eek: So tonight's menu is Simple Pork Roast, mashed potatoes and roasted asparagus with the usual side salad. And don't forget the vino... :)

Tonight's it leftover meatloaf sliced warmed in frypan w / a little butter, served opened-face style on home made bread, w 4 cheese mashed potatoes, mushroom gravy, I think I'll have a winter veggie mix with it.

We found a small Polish deli near my house, so I am going to make kielbasa! With it, I will make creamed spinach (never had it...hope it's good) and mashed potatoes (from the box..sorry!). :D

At our house it will be California Dreaming's Baked Potato soup and Rachael Ray's Blue Cheese and Walnut Salad w/Maple Dressing. I'm adding some pears to the salad. Both recipes are from this BB.

I menu planned this week, but forgot I had knitting class tonight. So it's the same menu, we're just not eating together:
Meatloaf that was made and in the freezer, just needs heated, red fingerling potatoes and fresh green beans.
I've had mine and the rest is in the fridge for the husband to heat.

It's a lazy/easy night tonight- veggie burgers with cheese and guacamole, sweet potato fries (TJ's), and steamed broccoli.

Well, I was going to cook Thai tofu curry with Butternut Squash, but now I have to grade 40 exams tonight, so I think I will skip the cooking and have leftovers instead. I have either Roasted Tomato Soup or Pasta with Shrimp, Sundried Tomatoes, and Broccoli. I'll definitely be making the curry tomorrow, though!

Kari - funny you should post. I did make dinner last night and it was All About Kari! We had Easy Layered Beans and Rice and Sweet Country Bread, both posted by you. We really liked both of them! :)

Assuming that DH remembered to turn the crockpot on and that we didn't lose power, there will be green chile corn chowder for dinner. I haven't had much luck with the crockpot lately so I don't have high hopes for it, but we'll see :o

Afghani Lentil And Noodle Casserole 1
Recipe By :
Serving Size : 4 Preparation Time :0:00
Categories : Casseroles Lentils
Amount Measure Ingredient -- Preparation Method

1 1/3 cups fat-free yogurt
1 1/2 cups leek -- chopped
2 tablespoons butter
2/3 cup green or brown lentils -- picked over and washed
1 1/3 cups vegetable stock
1 large onion -- chopped
1 1/3 cups tomato sauce
1/4 teaspoon salt
3/4 teaspoon coriander
3/4 teaspoon cumin
1/4 teaspoon pepper (rounded)
1/4 teaspoon cayenne (rounded)
2 1/2 ounces no boil lasagna noodles --
2 cloves garlic -- chopped
1/2 tablespoon all purpose flour
1 tablespoon mint
Saute leeks in butter for 5 minutes. Add onions and saute until golden. Stir in the lentils and add the vegetable stock. Bring to a boil, lower the heat, cover and simmer for 15 to 20 minutes. Add tomato sauce, salt, coriander, cumin, pepper and cayenne, simmer 30 minutes. Combine yogurt, flour and garlic, stir well. In an 8 inch square baking pan, put half yogurt on the bottom, layer with 1/2 noodles, 1/2 lentil sauce, repeat ending in lentil sauce. sprinkle mint over top and bake for 35 minutes at 350 degrees.

We're having Pan-Fried Bass (CL - 2004), Butternut squash, roasted potatoes and salad.
It's a free for all because DH is out of town so I had salmon stuffed with crabmeat (picked up from Wegmans) and made the girls whatever they wanted.
It's still warm here
Get ready Linsley - our high today was supposed to be 63 (although it did get into the 50s this morning) and tomorrow's high is only going to be 31! :eek:

We had real comfort food tonight. The temperature here dropped from 68 (tied a record) at midnight to about 40 right now. And it is really windy.
Chicken and Stuffing casserole (yes, the one with Campbell's Cream soups and Stove Top!)

Stephanie, here is the recipe. It's still in the crockpot, so I can't tell you how it tastes, but it smells good! :)
Three-Bean Chili with Chive-Flecked Cornmeal Dumplings
Chili
1 Tbs olive oil
1 large sweet yellow onion, chopped
1/2 small green bell pepper, seeded and chopped
2 garlic cloves, minced
3 Tbs tomato paste
1 Tbs chili powder, or more to taste
28 oz can crushed tomatoes
15.5 oz can black beans, drained & rinsed
15.5 oz can pinto beans, drained & rinsed
15.5 oz can kidney beans, drained & rinsed
1.5 cups water
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Dumplings
2/3 cup all-purpose flour
1/3 cup yellow cornmeal
2 teaspoons baking powder
1 teaspoon minced fresh chives
1/8 teaspoon salt
1/2 cup fresh or thawed frozen corn kernels
1/2 cup milk or soy milk
2 Tbs olive oil
To make the chili, heat the oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic, cover, and cook until softened, about 5 minutes. Stir in the tomato paste and chili powder and cook about 30 seconds longer.
Transfer the mixture to a 4 to 6 quart slow cooker. Add the tomatoes, beans, and water, season with salt and pepper, cover, and cook on Low for 6 to 8 hours.
To make the dumplings, combine the flour, cornmeal, baking powder, chives, and salt in a medium-size bowl about 45 minutes before serving time. Stir in the corn, milk, and oil until just combined. Do not overmix.
Turn the slow cooker to High and drop the batter by the spoonful onto the hot chili. Cover and cook on High until the dumplings are cooked through, 30 to 40 minutes. Serve immediately.

My changes:
I doubled the garlic, substituted 1 hot Hungarian pepper for the green, and partially seeded it since we like spicy. I also used 1 Tbs regular chili powder and about 1/2 Tbs of chipotle chili powder, again hoping for some spice. ;) Oh, and I doubled the amount of chives in the dumplings.

It was going to be dinner out, but my friend wasn't feeling well + it's a rainy night. So, I ran out and grabbed frozen Lean Cuisine deluxe pizza. Going to microwave it and have broccoli on the side and watch America's Top Model.

We had a really easy dinner tonight.
Boneless chicken breast with black bean and corn salsa on top, baked and then the last 5 minutes I added 2% milk fat Mexican shredded cheese.
It tasted like a restaurant entree.
I served the chicken with brown rice and asparagus.

I changed my mind. I had scrambled eggs with swiss chard/tomatoes/feta cheese. Much healthier then the burrito I would have grabbed and almost as tasty :)
We are finishing up leftovers. I had Vodka Cream Sauce over Penne with the CL's Roasted Cauliflower w/ Fresh Herbs and Parmesan. DH is at the studio warming up his Spinach Calzones and eating out of tupperware. Poor guy ;)

A) Because they're in-laws
B) Don't forget that Culinary Plagiary is easily hidden by removing the purchased items from their packaging and throwing them into a nice old dish. BUY half your dinner, and you'll be happier and calmer. This month's F&W has a great list of sources for every kind of turkey, including smoked or deep-fried. The latter, I believe, just needs re-crisping in the oven.
C) I know what you mean, though-- I went from having no thanksgiving plans to cooking for several people, having my in-laws here the day after for a brief visit, and then having my sister & her DH as weekend guests. YAH!!!!! :eek:

Salad & garlic bread sound just right with that! Last night was shopping night, so we had veggie burgers & salad. Tonight it's vegetable burritos and cilantro rice.
Tomorrow, I'm making the black bean pizza dough from this BB.
