Any of you in the Northeast can sympathize--the last few days have been awful; at least there are no more drought worries! Anyway, with the long weekend upon me and no big Memorial Day plans, my choices were: clean house, or cook?? It was a no brainer.
My daughter had a bake sale at school, so I decided to make the Oooey-Gooey Chocolate Peanut Butter Brownies from a few months back. Very well received, and easy to make! I would definitely make them again (especially since I have 1/2 can of condensed milk left).
Next, our neighbors invited us over for an impromptu game of cards last night. I volunteered to bring dessert since I've been wanting to make the Eating Well Died-and-went-to-heaven Cake that was posted a while back. I can add to the glowing reviews! A quote from my husband: "If this is lowfat, I'll eat my toes". The only changes I made were to substitute yogurt for the buttermilk, bake it in a 9 x 13 pan, and sprinkle a few chocolate chips on the top. I wouldn't do the chocolate chips again since they sunk to the bottom of the cake (the batter is thin) and since the cake is so rich-tasting, they really weren't necessary!
Since the oven was on, I then decided to make the Best Ever Lowfat Banana Bread that was also posted a few weeks back. Also delicious, but more cakey than bread-y.
Finally today, there were some breaks of sun, so I was able to work in the garden for a while, so the cooking was put on hold...at least for today. Anyone else do a lot of non-BBQ-related cooking this weekend?
